Any baker worth their salt knows that weighing ingredients yields far more consistent results than, say, scooping flour with a measuring cup. Emilia Perillo, pastry sous chef at Philadelphia’s Fitler Club, calls a kitchen scale a “home kitchen essential,” and Rae Krueger, owner of The Underbite Bites, also in Philadelphia, says, “A scale makes all the difference; accuracy in your measurements will give you the consistency you need to churn out all those holiday cookies!”
I appreciate that this model has a pull-out display, so you can read your measurements even with a large bowl. For the record, this is the one Ina Garten uses, and we all know the Barefoot Contessa can do no wrong.
